Beef stroganoff with Fluffy Rice

So our son recently turned 16 months. He still eats everything we put in front him, so I try as much as possible to vary his meals. Another bonus….we can now enjoy certain meals together as a family because he eats everything we eat, albeit less spicy. Lately, he is loving beef, especially beef stroganoff. I love the simplicity and versatility of this dish– he has it with rice, egg noodles, mashed potatoes and even mashed plantain. It’s also a great meal for the family.

Seafood Okra

My family loves Nigerian food… we really do! But let us be honest, sometimes cooking Nigerian food can be tedious especially when you want an authentic dish – it takes too long to prep, cook and then washing up after …. Ughhh!! Weekly Menu Planning (12-18 Months)

I am a big fan of weekly menu planning for my son. I used to plan his menu on Sunday evenings but now I do it on Saturday morning, so it gives me time for grocery shopping later on in the day.
